Poduthuval means fried vegetables in Tamizh ! It Is easy to make . The concerned vegetables are just fried in coconut or refined oil and salt water just sprinkled. Optionally Jeera, Asofetida[Hing] (Kayam)may be added  and a nutpaste mixing can make it exotic ~

In this case the vegetables are just fried not boiled and later fried.
